Peanut Butter Brownie Cookie Dough Torte

My philosophy on food:  Make a recipe so I know the basic result, and then make it again with extra.  Add the extra touch, the extra cup of chocolate chips, the extra layer of goodness, the extra sprinkle on top, the extra of whatever makes it better.

I speak love to people through food.  I’m not good at speaking words that say love, but if I give you a dessert or a meal, please know that it’s got my extra touch to say how much you mean to me.  It says, I’m your friend even though my words don’t come out right to speak it.  It says, you are worth the extra effort to me.  It says, I want you to be happy because you are important to me.  Food helps me communicate.  Food helps me build community.

And so, rather than a normal pan of bars, I’m going to make it the best pan of bars you’ve ever had.  It will be an over-the-top dessert you can drool over.  It will be a snack that isn’t just a snack, it’s an event.

This is one of those over-the-top desserts.  I adapted the recipe from one that started out as brownie cupcakes and it turned into this concoction.  I have trouble naming it.  I always have trouble naming my food because I tend to call it what’s in it.  So that means this is a Brownie Peanut Butter Peanut Butter Cup Chocolate Chip Cookie Dough Chocolate Drizzle Dessert. My love language can get complicated.  So I’ll maybe call it . . . Lots of Layers of Goodness Dessert.

(And for real, this isn’t that complicated to make.  It’s a lot of steps, but I wouldn’t say it’s difficult.  So please don’t be scared to make it!  It’s definitely worth the extra bit of effort.)

Ingredients

Peanut Butter Brownie

  • 1 cup butter
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 1 1/4 cup flour
  • 1/2 tsp salt
  • 2 eggs
  • 1 1/2 cups chocolate chips
  • 1 cup peanut butter
  • 2 cups marshmallows
  • 6-8 Reeses Peanut Butter Cups full sized

Chocolate Sauce

  • 1/2 cup chocolate chips
  • 1/4 cup butterscotch chips (or more chocolate chips)
  • 1/4 cup peanut butter

Cookie Dough

  • 1 stick butter softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 3 tbsp milk
  • 1 tsp vanilla
  • 1 1/4 cups flour
  • 1/4 tsp salt
  • 1 1/4 cups chocolate chips

Instructions

Peanut Butter Brownie Torte

  • Put tinfoil on the bottom of a 12 inch springform pan.  Then snap the side on.  Spray with cooking spray.  Set aside.
  • Melt butter, brown sugar, and sugar in the microwave until bubbly, about two minutes, stopping to stir halfway.  Either by hand or with your mixer, add the vanilla, flour, and salt.  Add the eggs with the mixer on low until incorporated and then mix on high until fully mixed.  Add the chocolate chips and mix until they are melted.  
  • Put peanut butter and marshmallows in the microwave for 1 minute.  Stir until smooth, although it will be a bit sticky.
  • Put 2/3 of the brownie batter in the prepared pan.  (You can sprinkle with some extra chocolate chips if you want.)
  • Drop the peanut butter/marshmallow mixture onto the batter and spread around into even layer.  Shouldn't be too difficult.
  • Set the Reeses cups evenly around the pan.  Sprinkle with some more chocolate chips just for fun.
  • Drop the rest of the batter over the peanut butter layer and spread into even layer.  It doesn't have to go all the way to the edge.  If some of the peanut butter layer shows around the edge yet, that's fine. 
  • Bake at 350 for 40-45 minutes.  It won't be completely set, but it will set up in the fridge when it's all done.

Cookie Dough and Chocolate Drizzle

  • Mix the butter, sugar, brown sugar until smooth.  Add the milk and vanilla until incorporated.  Then add the flour and salt until well mixed.  Stir in the chocolate chips.  
  • Melt the chocolate chips, butterscotch chips, and peanut butter in the microwave until smooth.  
  • Pour 3/4 of the chocolate sauce over the top of the brownie.  Don't push all the way to the edge, about 1/2 inch from sides.
  • Drop the cookie dough by spoonfuls over the chocolate until covered.  Press gently into even layer without squishing the chocolate sauce all to the edge.  It doesn't have to be perfectly smooth.  
  • Drizzle the rest of the chocolate sauce over the top.  It will hide any of the imperfections of the cookie dough layer.  Plus no one will notice anything out of place once they take a bite!  It's a show stopper!

Notes

If you don't have a springform pan, you could make this in a 9x9 pan.  
For a dessert with less steps, you can leave off the cookie dough layer and end with the chocolate sauce over the top.
